Shay Cooper

Having started his culinary career before he even left school, it's clear that Shay Cooper was always meant to do great things in the kitchen. With a penchant for British cookery and uncomplicated dishes that let the ingredients speak for themselves, Shay has worked in some of the finest UK kitchens.

Following his tenure at the Juniper in Altrincham and here at The Vineyard, he gained 3 AA Rosettes as the head chef at Devon's Endsleigh Hotel. Shay was awarded his first Michelin star at The Bingham in Richmond and went on to repeat this success in his current role as Executive Chef at The Goring, obtaining the first ever Michelin star in the hotel's prestigious hundred year history.

Instead of making show-off food that one might expect from a young chef bursting with ideas, Cooper has earned praise for his light touch, which allows the ingredients themselves to do the heavy lifting. Using subtly sophisticated flavours and textures Shay is an intelligent chef who does not over-egg the pudding by overcomplicating the dishes. He describes his cooking style as modern, traditional British.
