Describe your style of cooking?
Modern, classic French cuisine with both Mediterranean and far eastern influences. “My food is “Happy Food” – it is fresh, light, simple, colourful and full of flavours. I love cooking fish. I buy 80% of my ingredients from the South of England – the fish which is all line caught from Cornwall and Scotland.
Raymond Blanc is a great inspiration to me and I love his food. Customers who know Raymond’s cuisine will find my food slightly lighter with a more contemporary twist.
What are you going to bring to The Vineyard?
A new approach to cooking and food – exactly what the customer of today wants. The Vineyard has a wide range of customers and I need to give them flexibility as well as an unforgettable experience.
I like to get to know the customers and ensure their experiences are positive and that they will tell their friends.
It is not just about the food, it is also about creating a dining environment where we can share our knowledge and expertise with the customers.
I am looking to add to the already impressive list of awards and accolades The Vineyard has had over the years and keep The Vineyard on the gastronomic map.

And what about you?
I was born in Lure, in the Comte region of Eastern France; I was enthralled with cooking from an early age. My grandparents ran a small self sufficient organic farm and I used to hunt for game with my father. After leaving school, I work alongside the Michelin starred Chef Yves Lalloz on a 3 year apprenticeship at the Hotel Beausite, Luxeuil les Bains. The hotel was attached to a farm so I learned to work with ingredients straight “from the field to the plate.
Daniel lives with his partner Claire and has a son, Antoine who lives in Scotland. Currently living in Maidenhead, Daniel is a keen golfer when time allows with a decent handicap and a love of cycling and swimming.
And....
Daniel writes a monthly food column in the Reading Evening Post. He cooks at many Food Festivals around the Country including the Henley Food Festival, the BBC Good Food Show in Birmingham, the Taste of London and the Good Food and Wine Show in Cape Town, South Africa. He is a judge at the Pride of Reading Food Festival along side Anthony Worrell-Thompson.
